The base chocolate for this bar is the multi-award winning 65% Gran Palo Blanco, Peru.


Known by a variety of names like kukui, lumbang, candlenuts, kemiri nuts and many more. Kemiri nuts are widely used in foods, but also in many other ways. The oil from the nut is used for cosmetic products. other uses for the tree, include leis from the shells, leaves, and flowers; ink for tattoos from charred nuts,  a varnish with the oil, all parts of the tree are used. we could go on. In certain places in the world these nuts symbolize enlightenment, protecton and peace. But more importantly, they're amazing mixed with the right chocolate!


Iris grew up in the Netherlands eating lots of Indonesian foods. In the 50s many Indonesians emigrated to the Netherlands bringing their delicious cuisine with them. This kemiri nut (in Indonesian) is part of the Indonesian diet, often added to other vegetables and soups.


In terms of flavour think Macadamia nuts, just as rich, but with a slightly lighter and crunchier texture. 


About the base chocolate, the 65% coconut dark milk chocolate from Palo Blanco, in Piura Peru is towards the stronger end of the dark milk spectrum, but lighter than our dark chocolate. It has a pleasant chocolaty taste with malty notes. Made with coconut milk, but not overwhelmingly so. There is a light fruity acidity that balances the flavours presented in this chocolate bar.
